This cut is a premium pork roast, commonly cooked as a Christmas roast.  Why not make every week a Christmas roast? Place the roast uncovered on a rack, in a roasting dish.  Oven-bake for 30 minutes at the highest setting, then reduce temperature to 180 degrees celsius and cook for approximately 25 minutes for every 500g of weight.
